Easy Caviar Pie Recipe (Apéro with Chips + Spumante)

Silky, creamy, salty, indulgent, and effortlessly fabulous. Perfect for: Apéro hour, cocktail parties, girls-night-in, holiday hosting, pairing with sparkling wine and small bites.

Even though you can whip this easy Caviar Pie up in 15 minutes, it looks and tastes like something from a vintage supper-club champagne cart. Bring it and a bottle of Spumante to an upcoming holiday gathering and people will be leaning in to whisper, what IS that?, and immediately reach for a cracker.

Caviar Pie Recipe

Ingredients

Base Layer
6 hard-boiled eggs, finely chopped
¼ cup (60g) mayonnaise
¼ cup (60g) sour cream or créme fraîche
1 Tbsp Dijon mustard
1 Tbsp finely minced shallot
½ tsp sea salt
¼ tsp black pepper

Cream Layer
8 oz (225g) cream cheese, softened
⅓ cup sour cream or créme fraîche
1 Tbsp lemon juice
1 tsp Worcestershire sauce
2 Tbsp fresh chives, minced

Top Layer
3-4 oz (90-120 g) caviar (paddlefish, hackleback, sturgeon, or trout or salmon roe if you want a pop of color).
Extra chives for garnish

Serve With
Toast points, kettle chips, blinis, table water crackers, lavash, or thinly sliced and toasted baguette.
A chilled bottle of Good Clean Spumante Notte Bianca.

Instructions

Build the Egg Base
In a mixing bowl, stir together the chopped eggs, mayo, sour cream/créme fraîche, Dijon, shallot, salt, and pepper. Spread evenly in a 9-inch pie dish or shallow serving dish.

Mix the Cream Layer
Beat cream cheese, sour cream/créme fraîche, lemon juice, Worcestershire, and chives until smooth and fluffy. Gently spread over the egg mixture. (Tip: a warm offset spatula creates a flawless surface.) Cover and refrigerate for at east 2 hours or overnight for maximum flavor.

Add the Caviar
Spoon the caviar across the top — don’t press or smear; let the pearls fall naturally. Serve ice-cold for the best texture and flavor.
