meet ivole: a bright, organic white from the heart of tuscany that drinks like sunshine, wildflowers, and good energy. fresh and mineral-driven with notes of pear, peach, melon, and a hint of jasmine. it’s summer in a bottle, no matter the season.

description: straw yellow in color with golden undertones, ivole opens with a bouquet of stone fruit, lemon blossom, and chamomile. the palate is soft yet structured, with flavors of juicy pear, melon, apricot, and a delicate touch of wild herbs. a crisp, dry finish brings balance, sparkle, and a sense of place. easygoing elegance that lingers long after the last sip.

region: ivole is crafted at poggio del moro, a certified organic estate just south of montepulciano in tuscany. surrounded by wheat fields, olive groves, and cypress-lined roads, this historic land has produced wine for centuries. the modern estate was lovingly revived by owners tania and luigi, alongside a young passionate winemaking team.

winemaking: minimal-intervention and certified organic from vineyard to bottle. grapes are harvested from the estate’s hillside vineyards and vinified gently to preserve freshness and aromatics. No added sugar, no excessive manipulation. ivole is part of the estate’s “flower power” line, a trio of thoughtfully made wines.

grapes: a tuscan white blend made with trebbiano, grechetto, and malvasia, each bringing something special to your glass.

trebbiano: fresh and fruity, food-friendly grape producing tough-skinned berries that yield yellow juice. grown in italy as far back as roman times. dry, medium-light body, no tannins, medium-high acidity with flavors of peach, lemon, green apple, seashell and basil.

grechetto: a tuscan and umbrian white grape known for its structure, minerality, and dry citrusy finish. with notes of pear, apple, wild herbs, and almond, it brings body and freshness to blends.

malvasia: an aromatic white grape that adds floral lift and softness to tuscan blends. with notes of apricot, citrus blossom, peach, and a hint of almond. it brings freshness and elegance to wines.

vine density: 5000 plants / hectare

type of soil: sand, clay, and light loam

altitude: variable from 290 to 300 metres a.s.l.

age of the vines: 15-17 years

harvesting time: the grapes are picked before 10 o clock in the morning and are placed overnight in a cool underground fruttaia (room for drying grapes for vinsanto) and then moved to onto the next stage the following morning.

fermentation: pressed without de-stemming, the fermentation process begins naturally and lasts for 30-35 days at controlled temperature of 12-15 C.

maturation: ages on it’s own fine lees in stainless steel for three months with frequent batonnage.

bottling: on the full moon at the end of january/beginning of february.

ageing potential: best drank young, within 2 years from its harvest.

pairs with: soft cheeses, grilled seafood, herby pasta, bruschetta, or just golden hour with your favorite playlist.

serve at: 45-55 degrees in a white or universal glass.

residual sugar: 0 g/l, .45 grams per residual sugar per 5oz glass. residual sugar in popular sweet white wines like muscato can contain up to 14.7 grams pf sugar per glass. regular chardonnays and dry white table wines can contain up to 1.4 grams of sugar per glass.
