Ingredients
12 oz pasta (penne, rigatoni or fettuccine work well)
2 tbsp olive oil or unsalted butter
2 garlic cloves, minced
1 small shallot, finely chopped
1 cup pumpkin purée
½ cup heavy cream
½ cup grated parmesan cheese (plus extra for topping)
½ tsp nutmeg
Salt and pepper to taste
6-8 fresh safe leaves, thinly sliced (or ½ tsp dried)
Directions
Cook the pasta: In a large pot of salted boiling water, cook pasta until al dente. Reserve ½ cup of the pasta water before draining.
Sauté: In a large skillet, warm the olive oil over medium heat. Add garlic and shallot, cook until fragrant and soft (2-3 minutes)
Make the sauce: Stir in pumpkin purée, cream, nutmeg, sage, salt, and pepper. Simmer for 3-4 minutes until creamy.
Add pasta: Toss cooked pasta into the sauce, adding reserved pasta water a splash at a time until silky and coated. Stir in Parmesan.
Serve: Divide into bowls, top with more Parmesan, cracked pepper, and fried sage leaves (optional).
