A simple Pasta for Red Wine Nights

Plin Pasta with Olive Oil, Butter, & Parmesan

There are nights when dinner doesn’t need to be impressive, it just needs to be easy and delicious. I make this when I want something comforting and deeply satisfying. A bowl of Agnolotti del Plin pasta with olive oil, butter and Parmesan. Dusted with more shredded Parmesan, cracked black pepper, and flaky salt. Served with a glass of Good Clean Cabernet.

Agnolotti del Plin is a traditional, small, pinched, stuffed pasta from the Piedmont region of Northern Italy. I buy fresh Plin from Eataly. No sauce. No long prep. Quick, easy, and so satisfying. Just a quiet cozy dinner that lets the wine shine.

Why This Pasta Works So Well with Cabernet

Good Clean Cabernet is dry, balanced, and easy to drink. It’s incredibly food friendly. The richness of butter and cheese softens the wine’s structure, while black pepper brings out its dark fruit and spice. The kind of pairing that feels natural. When I take a bite and then take a sip, there’s no place else I’d rather be.

Plin Pasta with Olive Oil, Butter & Parmesan
Serves: 2-3
Time: 15 minutes

Ingredients

  • 12 oz plin pasta (or any filled pasta)
  • 2 tablespoons unsalted butter
  • 2 tablespoons good-quality olive oil
  • ½ cup finely grated Parmesan cheese (plus more to finish)
  • Freshly cracked black pepper
  • Pink Himalayan sea salt (or flaky sea salt)

Instructions

  • Bring a large pot of generously salted water to a boil. Cook the plin pasta until just tender. Reserve ½ cup of the pasta water, then drain.
  • Return the pasta to the warm pot. Add the butter and olive oil, gently tossing until the butter melts and coats the pasta.
  • Add a small splash of reserved pasta water along with the Parmesan. Toss gently until the pasta looks glossy and lightly coated.
  • Finish with cracked pepper and pink Himalayan sea salt to taste.
  • Serve immediately with extra shaved Parmesan and a generous glass of Good Clean Cabernet.

This is the kind of dinner that reminds me why I love wine and started a wine business in the first place. Not for rules or pairings, or special occasions, but for wine that makes every day feel complete.
